Asian Sweet And Sour Lamb

Ingredients
  Lamb breast 1 , boned, trimmed and cut into 1 inch cubes
  Vinegar 1⁄4 Pint
  Stock 1⁄4 Pint
  Salt 1⁄2 Teaspoon
  Brown sugar 3 Tablespoon
  Onion 1 Medium, sliced
  Canned pineapple chunks 8 Ounce
  Arrowroot 2 Tablespoon (Mixed With A Little Cold Water)
Directions

Fry the lamb gently for 3-4 minutes.
Place in a casserole, combine the other ingredients, except the arrowroot, and pour over lamb.
Cover and bake in a moderate oven for 2 hours until tender.
When cooked, skim off fat and thicken sauce with arrowroot.
Taste and adjust the seasoning and serve with fried rice.
