Classic Coconut Rice

A South Indian delight, the coconut rice recipe is rice cooked in coconut milk. An easy to cook recipe it is a great preparation. The subtle flavors and tastes make it a great dish for your lunch or dinner. It goes very well with the traditional Indian curries.
Ingredients
  Boiled rice 2 Cup (32 tbs)
  Coconut oil 30 Milliliter
  Cumin seeds 1⁄2 Teaspoon
  Mustard seeds 1⁄2 Teaspoon
  Asafoetida 1 Pinch
  Udad dal 2 Teaspoon
  Chili powder 1⁄2 Teaspoon
  Green chilies 2
  Chana dal 2 Teaspoon
  Red chili 1
  Broken cashew nuts 50 Gram
  Coconut 1 , grated
  Salt 2 Teaspoon
Directions

GETTING READY
1. Chop green chillies.

MAKING
2. Heat the pan and add coconut oil.
3. Add mustard seeds, cumin seeds, chana dal, urad dal and whole red chillies.
4. Add curry leaves and green chillies.
5. Add a pinch of asafetida.
6. Add red chilli powder.
7. Add broken cashew nuts and mix well. Cook for a few seconds.
8. Add boiled rice.
9. Add salt and grated coconut and mix well.

SERVING
10. Serve Classic Coconut Rice with any vegetarian or non-vegetarian gravy.
