Curried Salad Bombay
|Skinless boneless turkey breast||1 1⁄3 Pound (1 Package Perdue Fit 'N Easy Fresh)|
|Reduced sodium chicken broth||1⁄2 Cup (8 tbs)|
|Reduced calorie mayonnaise||1⁄2 Cup (8 tbs)|
|Plain low fat yogurt||1⁄2 Cup (8 tbs)|
|Peach chutney/Mango chutney||1 Tablespoon|
|Curry powder||2 Teaspoon|
|Ground black pepper||To Taste|
|Red apple||1 , unpeeled, cored and sliced|
|Green apple||1 , unpeeled, cored and sliced|
|Seedless green grapes||3⁄4 Cup (12 tbs)|
|Snipped chives||2 Tablespoon|
|Green lettuce/Bibb lettuce||4|
Microwave Directions: In deep 2-quart microwave-safe dish, place turkey breast and broth.
Cover with plastic wrap and microwave at HIGH (100% power) 3 minutes.
Reduce power to MEDIUM-HIGH (70% power) and microwave 7 minutes.
Turn turkey breast over; cover with plastic wrap and microwave at MEDIUM-HIGH 7 minutes longer.
Cover dish with aluminum foil and cool in broth.
In medium bowl, combine mayonnaise, yogurt, chutney, curry, salt and pepper; blend well.
Remove turkey from broth and cut into small cubes; add to mayonnaise mixture.
Add apples, grapes and chives; toss gently to coat ingredients with dressing.
