Curried Salad Bombay

Ingredients
  Skinless boneless turkey breast 1 1⁄3 Pound (1 Package Perdue Fit 'N Easy Fresh)
  Reduced sodium chicken broth 1⁄2 Cup (8 tbs)
  Reduced calorie mayonnaise 1⁄2 Cup (8 tbs)
  Plain low fat yogurt 1⁄2 Cup (8 tbs)
  Peach chutney/Mango chutney 1 Tablespoon
  Curry powder 2 Teaspoon
  Ground black pepper To Taste
  Red apple 1 , unpeeled, cored and sliced
  Green apple 1 , unpeeled, cored and sliced
  Seedless green grapes 3⁄4 Cup (12 tbs)
  Snipped chives 2 Tablespoon
  Green lettuce/Bibb lettuce 4
  Salt To Taste
Directions

Microwave Directions: In deep 2-quart microwave-safe dish, place turkey breast and broth.
Cover with plastic wrap and microwave at HIGH (100% power) 3 minutes.
Reduce power to MEDIUM-HIGH (70% power) and microwave 7 minutes.
Turn turkey breast over; cover with plastic wrap and microwave at MEDIUM-HIGH 7 minutes longer.
Cover dish with aluminum foil and cool in broth.
In medium bowl, combine mayonnaise, yogurt, chutney, curry, salt and pepper; blend well.
Remove turkey from broth and cut into small cubes; add to mayonnaise mixture.
Add apples, grapes and chives; toss gently to coat ingredients with dressing.
