Winter Fruit-Chicken Combo

Ingredients
  Boneless chicken 1 Kilogram
  Apple 1 Large
  Pomegranate 1
  Pear 1
  Oranges 2
  Grapes 6
  Curd 250 Gram
  Ginger paste 1 Tablespoon
  Onion 1 Tablespoon
  Coriander powder 2 Teaspoon
  Cumin powder 2 Teaspoon
  Green chilies 3 , chopped
  Salt To Taste
  Sugar 1 Pinch
  Garam masala powder 1 Teaspoon
  Refined oil 2 Tablespoon (White One)
  Raisins 10 (For Garnishing)
  Cashews 10 (For Garnishing)
  Cherries 6 (For Garnishing)
Directions

Wash the chicken thoroughly with warm water and pat dry. Marinate the chicken pieces with a mixture of onion and ginger paste along with salt, sugar and curd. Keep it untouched for 1.5-2 hours.

Cube the fruits evenly except the grapes. Heat oil in a pan and put in the all the cubed fruit pieces except the grapes. Remove the fruits instantly from the pan.

Put the marinated chicken in oil and fry for a few minutes until the oil comes up. Add coriander and cumin powder to it and stir it well. Keep frying for another 5 mins. Add a cup of hot water when the chicken becomes dry and leave it to simmer for another 15-20 mins.

Add the fruit pieces, chopped green chilies and garam masala powder. Remove from heat. Garnish it with raisins, cashewnuts and red cherries.
Serve hot with fried rice or roomali rotis.

Winter is a time when we can gorge on delicacies without a care in the world. It is also the time to try out some exotic recipes. However, it is imperative that we remember to include healthy food in our diet too. The nutritious and luscious looking winter fruits have always attracted me but alas! The goodness of such healthy food has been lost on my kids so far. They prefer to try out the various meat dishes preferably chicken which can never seem to be the wrong kind of food for them even if you get to serve it in between meals. Hmm, I thought to myself, “I’ll find a way to get better of you yet!” Thus was born the concoction of fruits and chicken which turned out to be the one of the most delicious recipes for healthy food ever. And my kids lapped up the healthy food item eagerly with not a morsel being left in their plates. The result? A very happy and satisfied mom indeed!
