Microwave Saffron Rice
|Olive oil/Vegetable oil||1 Tablespoon|
|Garlic||2 Clove (10 gm), minced|
|Regular long grain rice||1 Cup (16 tbs), uncooked|
|Canned ready to serve chicken broth||14 1⁄2 Ounce (1 Can, Swanson Clear)|
|Water||1⁄4 Cup (4 tbs)|
|Saffron/Generous dash turmeric||1⁄8 Teaspoon, crushed|
|Sliced green onions||1⁄2 Cup (8 tbs)|
|Toasted sliced almonds||1⁄2 Cup (8 tbs)|
1. In 2-quart microwave-safe casserole, combine oil and garlic. Cover with lid; microwave on high 1 minute.
2. Stir in rice, broth, water and saffron. Cover; microwave on high 10 minutes. Stir.
3. Reduce power to 50%. Cover; microwave 10 minutes or until rice is nearly done. Stir in green onions and almonds. Let stand, covered, 5 minutes or until rice is tender.
