Cucumber Raita

Ingredients
  Plain non-fat yogurt 8 Ounce
  Cucumber 1 Small, peeled, seeded and finely diced
  Diced green bell pepper 1⁄4 Cup (4 tbs)
  Finely chopped fresh parsley/Cilantro 2 Tablespoon
  Ground cumin 1⁄4 Teaspoon
  Ground black pepper To Taste
Directions

In a bowl, whisk the yogurt until smooth.
Add remaining ingredients except pepper.
Stir well, cover and chill until ready to serve.
Can be made up to 1 hour in advance.
Sprinkle with pepper before serving.
