Nariyal Ki Barfi
|Coconut shavings||2 Cup (32 tbs) (Use Fresh)|
|Sugar||1 1⁄2 Cup (24 tbs)|
|Fried cashewnuts||1 Tablespoon, broken|
|Cardamom powder||1⁄2 Teaspoon|
Fry the coconut scrapings till golden.
With the sugar and 1 cup water, make a syrup of 2-thread consistency.
Add the cocount scrapings and cook till thick.
Add the ghee and reduce the heat.
Cook till the mixture leaves the sides of the vessel.
When done, add the fried cashewnuts and cardamom powder.
Grease a plate with ghee and pour in the mixture.
When cool, cut into desired shapes.
