Doodh Ki Kheer
|Milk||4 Cup (64 tbs)|
|Cashewnuts||1 Tablespoon, broken|
|Sugar||1 Cup (16 tbs)|
|Cardamom powder||1 Teaspoon|
|Saffron||1⁄2 Teaspoon (soaked in 1 tsp milk)|
Wash rice and add to the milk and cook on a slow fire. Rice may also be pressure-cooked earlier and added to the milk.
When the milk turns a pinkish colour, add sugar and cook further.
Mash the rice with a ladle and when the kheer is thick and creamy, remove from fire.
Add nuts, cardamom powder and saffron.
Serve hot or cold.
