Curry Flavored Chicken

  Chicken 3 1⁄2 Pound, cleaned
  Butter 2 Tablespoon
  Onion 1 Large, diced small
  Garlic 1 Clove (5 gm), smashed and chopped
  Curry powder 2 Tablespoon
  Evaporated milk 1 Cup (16 tbs)
  Tomato paste 1 Tablespoon
  Chicken stock 1⁄4 Cup (4 tbs), heated

Preheat oven to 350 °F (180 °C).
Cut chicken into 8 pieces. Remove skin. Set chicken aside.
Heat butter in ovenproof saute pan over medium heat. Add onion and garlic; cook 4 minutes over low heat. Add curry powder, mix and cook 5 minutes over low heat.
Add chicken pieces. Season with salt and pepper. Cook 12 minutes to brown chicken, turning pieces over twice during cooking. If needed, add more butter.
Add remaining ingredients, mix and cover pan. Cook 20 minutes in oven.
