Lotus Seed And White Gourd Kheer
|Grated white gourd||500 Gram|
|Lotus seeds||42 Gram, roasted and ground|
|Full cream milk||2 1⁄2 Liter|
|Green cardamoms||6 , crushed seeds only|
Squeeze the water from the grated white gourd and place it in a sieve.
Put the milk in a large, wide-mouthed pan over a medium flame and keep stirring it till it thickens. Gradually add the sugar and the powdered lotus
Heat the saffron in half a cup of milk and crush it between two fingers and add it to the thickening milk. Add the crushed cardamoms and simmer over a very low fire for 5 to 7 minutes. Remove from the fire and cool.
Chill the kheer before serving it.
