Rice With Sun Dried Tomatoes
|Chopped onion||1⁄2 Cup (8 tbs)|
|Vegetable oil||1 Teaspoon|
|Garlic cloves||2 Small, minced|
|Sun dried tomato halves||4 , diced (not packed in oil)|
|Uncooked regular long grain rice||2 Ounce|
|Chopped fresh parsley||1 Tablespoon|
1. In 1-quart microwavable casserole combine onion, oil, and garlic and stir to coat. Cover and microwave on High (100%) for 1 minute, until onion is softened.
2. Add tomatoes, rice, and 1 1/4 cups water. Cover and microwave on High for 20 minutes.
3. Let stand, covered, for 2 to 3 minutes, until liquid is absorbed. Stir in parsley.
