Rice With Sun Dried Tomatoes

Ingredients
  Chopped onion 1⁄2 Cup (8 tbs)
  Vegetable oil 1 Teaspoon
  Garlic cloves 2 Small, minced
  Sun dried tomato halves 4 , diced (not packed in oil)
  Uncooked regular long grain rice 2 Ounce
  Chopped fresh parsley 1 Tablespoon
Directions

1. In 1-quart microwavable casserole combine onion, oil, and garlic and stir to coat. Cover and microwave on High (100%) for 1 minute, until onion is softened.
2. Add tomatoes, rice, and 1 1/4 cups water. Cover and microwave on High for 20 minutes.
3. Let stand, covered, for 2 to 3 minutes, until liquid is absorbed. Stir in parsley.
