Saraswat Colocasia Stem Raita

Ingredients
  Colocasia stalks 25 , fine skin removed as far as possible and cut into small pieces. wash and keep aside
  Thick curd 1 Cup (16 tbs) (heavy)
  Green chillies 4 , deseeded
  Coconut 1 Large, grated
  Garlic 4 Clove (20 gm)
  Onion 1 Small, finely chopped
  Sugar 1 Tablespoon
  Mustard seeds 1⁄2 Teaspoon
  Curry leaves sprig 1
  Salt To Taste
  Ghee 1 Tablespoon
Directions

Place the colocasia stems in 2 cups of water and allow to cook till soft. Drain and discard the water.
Place the colocasia stem pieces in a large bowl. Add the ground masala to it and mix well.
Whisk the sugar well and add to the stems in the bowl. Also add the finely chopped onion and salt.
Heat 1 tablespoon ghee, add the curry leaves and mustard seeds and allow to crackle. Then add this to the curd mixture and taste for salt.
This makes a very unusual raita.
