|Milk||1 3⁄4 Pint|
|Pistachio nuts||2 Ounce, chopped|
|Ground almonds||2 Ounce|
|Cardamom seeds||1 1⁄2 Teaspoon, crushed|
|Green coloring||3 Drop (Few drops)|
Pour the milk into a heavy pan, bring to the boil and simmer, uncovered, until it has reduced by half.
Add the sugar and dissolve over low heat.
Mix the pistachio nuts, almonds and cardamom seeds and add to the pan.
Stir well and continue to cook, stirring, until the mixture is thick.
Blend in a few drops of green colouring to give a delicate green colour.
Pour the mixture into a greased shallow dish or tin and decorate with silver paper, if liked.
When cool, cut the barfi into squares.
