Phithod Ka Saag

My friend, who is a professional chef at famous five star hotel in Jaipur, gave me this Phithod ka Saag recipe. This is a traditional recipe. Phithod ka Saag is a very popular vegetable dish in Rajasthan. It is generally eaten during dinner. It goes well with roti but it can also be eaten with plain rice. Ingredients
  Besan 385 Gram
  Tamarind 65 Gram
  Yoghurt 950 Gram
  Turmeric 15 Gram
  Degimirch 25 Gram
  Ginger 55 Gram, chopped
  Chili 30 Gram, chopped
  Red chilly 5 Gram
  Ghee 150 Gram
  Onion 285 Gram, chopped
  Salt 55 Gram
  Corriender 4 Gram
  Coriander leaves 30 Gram
  Cumin 3 Gram
  Fennel 3 Gram
  Garlic ginger paste 25 Gram
Directions

Soak the tamarind in hot water and take out the pulp.
Heat oil add cummin and fennel, allow to crackel add chopped gr.chilly, crushed corriender ginger and saute.
Add the mixture of besan, curd,salt and finish with corriender leaves.
Set the mixture in a geeased tray and cut into diamond shape.
For gravy, heat oil, add cummin and whole red chilly and sauteadd chopped onion cook till
golden brown add ginger garlic paste,
Add kadi made of besan , curd, water, salt, degi mirch and at end add tamarind pulp.
