My friend, who is a professional chef at a famous Five Star Hotel, gave me this Cucumber Raita recipe. It is a very simple and easy recipe. You will love this delicious recipe. Cucumber Raita is the best Indian condiment .It has cooling effect which can be used to foil the effects of spicy Indian dishes .It is a side dish which increases your taste. You should try this Cucumber Raita recipe.
Ingredients
  Yogurt 1 1⁄5 Liter
  Cucumber 1⁄2 Kilogram
  Salt 25 Gram
  Cumin 20 Gram
Directions

• Whisk yoghurt in a bowl with a whisk till no grains are left in yoghurt.
• Add salt and whisk.
• Broil the cumin and crush it coarsely.
• Add this to the yoghurt and whisk.
• Peel the cucumber and grate the cucumber flesh only {not the seed.}
{please note that the cucumber has to be grated from the thick grate}.
• Mix the cucumber and the yoghurt with a spoon and not a whisk.

I love this recipe..very refreshing! i always used finely julienned cucumbers for this but never grated ..though how am I supposed to discard the seeds. do u mean to core them..? so much would be wasted then... :(

the middle bit on a cucumber is watery rubbish , cut the cucumber longways and run a tea spoon right down the length of the cucumber to remove the seeds.
