Indian Fried Eggplant

Ingredients
  Eggplant 1 Medium
  All purpose flour 1 Cup (16 tbs)
  Baking powder 1 Teaspoon
  Salt 1 Teaspoon
  Turmeric 1 Teaspoon
  Curry powder 2 Teaspoon
  Milk 1 Cup (16 tbs)
  Egg 1
  Salad oil 1⁄4 Cup (4 tbs)
Directions

Wash eggplant.
Beat remaining ingredients with rotary beater until smooth.
Heat fat or oil (1 inch deep) to 375° in large skillet.
Cut eggplant into 1/4-inch slices.
Dip slices into batter, letting excess drip into bowl.
Fry in hot fat until golden brown, turning once.
Drain.
If desired, salt to taste.
