Spicy Red Beans And Rice

Ingredients
  Lean salt pork 1⁄2 Pound, diced
  Garlic 1 Clove (5 gm), minced
  Canned red kidney beans 21 Ounce, drained (2 1/3 Cups, One 1-Pound, 5-Ounce Can)
  Cooked rice 3 Cup (48 tbs)
  Minced parsley 1 Tablespoon
  Salt To Taste
  Pepper To Taste
Directions

Fry salt pork until crisp and brown.
Remove pork.
Pour off about half of fat.
Add garlic to fat in skillet and cook for 2 or 3 minutes.
Add beans, rice, and parsley, and salt and pepper to taste.
Heat.
