Colonial Peanut Soup

Ingredients
  Butter 1⁄4 Cup (4 tbs)
  Onion 1 Medium, finely chopped
  Celery stalks 2 , finely chopped
  All purpose flour 3 Tablespoon
  Chicken broth 2 Quart
  Smooth peanut butter 2 Cup (32 tbs)
  Light cream 1 3⁄4 Cup (28 tbs)
  Chopped peanuts 1 Tablespoon
Directions

In a medium saucepan melt the butter and saute the onion and celery until transparent.
Blend in the flour.
Add the stock and bring it to a boil.
Remove the pan from heat.
Pour the stock through a strainer.
Return the stock to the pan.
Reserve the vegetables for another recipe.
Add the peanut butter and cream.
Blend well and heat through.
Pour the soup into bowls and garnish with peanuts.
