Indian Spiced Pumpkin Soup
|Coarsely chopped onion||3⁄4 Cup (12 tbs)|
|Ground coriander||1 Teaspoon|
|Ground cumin||1⁄2 Teaspoon|
|Pumpkin||2 Cup (32 tbs) (Canned / Cooked)|
|Chopped fresh coriander||1⁄4 Cup (4 tbs)|
|Brown sugar||2 Tablespoon|
|Tomato paste||2 Tablespoon|
|Peanut butter||1 Tablespoon|
|Black pepper||1⁄4 Teaspoon|
1. Melt the butter in a medium-size saucepan over medium heat. Add the onion and saute 3 to 4 minutes, or until light golden. Add the coriander, cumin and turmeric, and cook, stirring, 1 minute.
2. Add the pumpkin, coriander, sugar, tomato paste, peanut butter, pepper, salt and 3 cups of water, and stir gently to mix well. Bring the mixture to a boil, then cover the pan, reduce the heat to low and simmer the soup about 30 minutes, or until the flavors are well blended.
