Ingredients
  Skim milk 2 Cup (32 tbs)
  Cornmeal 1⁄4 Cup (4 tbs)
  Sugar 1⁄4 Cup (4 tbs)
  Baking soda 1⁄8 Teaspoon
  Ground ginger 1⁄2 Teaspoon
  Ground cinnamon 1⁄2 Teaspoon
  Molasses 1⁄4 Cup (4 tbs)
  Skim milk 1 Cup (16 tbs), cold
  Nutmeg 1
Directions

Preheat oven to 275° F.
Heat 2 cups skim milk in a double boiler or a medium saucepan over low heat.
Add cornmeal, a little at a time, stirring constantly.
Cook 15 minutes, or until thick, stirring constantly.
Remove from heat.
Set aside.
In a bowl, combine sugar, soda and spices.
Stir to mix Well.
Add to cornmeal mixture and stir.
Add molasses and 1 cup cold milk.
Stir to mix thoroughly.
Pour into a 1-quart casserole and bake 2 hours.
