Indian Pulled Chicken Sandwiches

Ingredients
  Whole milk yogurt 3⁄4 Cup (12 tbs) (Plain One)
  Mango chutney 3⁄4 Cup (12 tbs)
  Fresh lime juice 2 Tablespoon
  Mild curry powder 2 Teaspoon
  Rotisserie chicken 1 Small, meat shredded, skin and bones discarded
  Scallions 2 , thinly sliced
  Cilantro leaves 1⁄2 Cup (8 tbs), coarsely chopped
  Kosher salt To Taste
  Freshly ground pepper To Taste
  Baby arugula 1 Cup (16 tbs)
  Brioche rolls/Other rolls 4 , split
Directions

In a food processor, pulse the yogurt, mango chutney, fresh lime juice and curry powder until the mixture is blended but not completely smooth.
Scrape the yogurt mixture into a medium bowl, add the shredded chicken meat, sliced scallions and chopped cilantro and toss.
Season the pulled chicken salad with salt and pepper.
Lay the arugula on the rolls, spoon the chicken salad on top and serve.
