Indian Pulled Chicken Sandwiches
|Whole milk yogurt||3⁄4 Cup (12 tbs) (Plain One)|
|Mango chutney||3⁄4 Cup (12 tbs)|
|Fresh lime juice||2 Tablespoon|
|Mild curry powder||2 Teaspoon|
|Rotisserie chicken||1 Small, meat shredded, skin and bones discarded|
|Scallions||2 , thinly sliced|
|Cilantro leaves||1⁄2 Cup (8 tbs), coarsely chopped|
|Kosher salt||To Taste|
|Freshly ground pepper||To Taste|
|Baby arugula||1 Cup (16 tbs)|
|Brioche rolls/Other rolls||4 , split|
In a food processor, pulse the yogurt, mango chutney, fresh lime juice and curry powder until the mixture is blended but not completely smooth.
Scrape the yogurt mixture into a medium bowl, add the shredded chicken meat, sliced scallions and chopped cilantro and toss.
Season the pulled chicken salad with salt and pepper.
Lay the arugula on the rolls, spoon the chicken salad on top and serve.
