Paneer is an indian cottage cheese which is very tasty when made properly ( could be very bland if not made properly ) and is used in a large number of dishes - and for making russogollas ( a bengali sweet ). Here is how to make it
  Milk 1 Liter, 3% fat.
  Water 250 Milliliter
  Citric acid 1 Teaspoon

1. In vessel, heat milk.
2. In a tumbler, pour water, add citric acid and mix, pour this mixture into the milk.
3. Continue to heat milk until it completely splits, turn off the flame and allow to sit for few minutes.
4. Using a tea strainer, remove the excess water. Put a weight on the paneer, leave for about 1 hour.

5. Cut into cubes. It can be served raw or used in preparation of any delicacy.
