Puliogre Gojju is a tamarind concentrate with added rasam powder, jaggery and a little salt which is used for making one type of puliogre ( there are many varieties of puliogre, this one is the mysore variety and is considered by many - including me :-) - as the best ). You can also make rasam and gojju avval( flaked rice, a breakfast item ) from this puliogre gojju.
1. In a skillet, place 500 ml water and tamarind, boil for 5 minutes. Turn the flame off, let it cool, mix the tamarind pulp with water.
2. Add 200 ml water, take the remaining part out, if any. Place over heat and boil till it becomes 1/3rd of its original volume.
3. Add rasam powder, salt and jaggery, cook until the jaggery is totally dissolved and the consistency is thick like a paste.
4. Store in an airtight glass container and use for making puliogre.
