Curried Turkey Salad With Papaya
|Diced cooked turkey/Chicken||3 Cup (48 tbs)|
|Thinly sliced celery||1 Cup (16 tbs)|
|Thinly sliced green onions with tops||1⁄2 Cup (8 tbs)|
|Ground red cayenne pepper||To Taste|
|Romaine lettuce leaves||12 Large, rinsed and crisped|
|Papayas||2 Large, peeled, seeded and sliced lengthwise|
|Roasted salted cashew||1⁄4 Cup (4 tbs)|
|Lemon||1 , cut into wedges|
Prepare Curry Dressing; set aside.
Combine turkey, celery, and onions; mix lightly with dressing.
Season to taste with salt and red pepper.
Arrange lettuce on 4 dinner plates.
Mound turkey salad on each plate; arrange papaya slices alongside.
Sprinkle cashews over salad.
Offer lemon wedges to squeeze over salad and fruit.
