Jade Mint Raita
|Stemmed tightly packed fresh mint leaves||1⁄3 Cup (5.33 tbs)|
|Plain yogurt||2 Cup (32 tbs)|
|Creme fraiche/Sour cream||1⁄4 Cup (4 tbs) (Generous Amount)|
|Salt||1⁄2 Teaspoon (Or To Taste)|
|White pepper||1⁄4 Teaspoon|
|Chopped red onion||2 Tablespoon|
|Fresh mint leaves||4|
In a blender or food processor fitted with the steel blade, process 1/3 cup mint leaves until finely chopped.
Add yogurt; process to a puree.
In a medium-size bowl, combine puree, Creme Fraiche, salt, sugar and white pepper.
Cover and refrigerate at least 1 hour or overnight.
Garnish with onion and mint leaves.
