Jade Mint Raita

Ingredients
  Stemmed tightly packed fresh mint leaves 1⁄3 Cup (5.33 tbs)
  Plain yogurt 2 Cup (32 tbs)
  Creme fraiche/Sour cream 1⁄4 Cup (4 tbs) (Generous Amount)
  Salt 1⁄2 Teaspoon (Or To Taste)
  Sugar 1⁄2 Teaspoon
  White pepper 1⁄4 Teaspoon
  Chopped red onion 2 Tablespoon
  Fresh mint leaves 4
Directions

In a blender or food processor fitted with the steel blade, process 1/3 cup mint leaves until finely chopped.
Add yogurt; process to a puree.
In a medium-size bowl, combine puree, Creme Fraiche, salt, sugar and white pepper.
Cover and refrigerate at least 1 hour or overnight.
Garnish with onion and mint leaves.
