Bhindi Fry

  Bhindi 3⁄4 Kilogram, cut into halves, lengthwise
  Onions 4 Large, sliced
  Tomatoes 4 Large, grated
  Ginger garlic paste 1 Tablespoon
  Curd 1⁄2 Cup (8 tbs), whipped
  Saunf 1 Teaspoon
  Kalonji 1 Teaspoon
  Haldi 1⁄2 Teaspoon
  Red chilli powder 1 Teaspoon
  Green chillies 6 , deseeded cut lengthwise
  Salt To Taste
  Garam masala 1 Teaspoon (Ground Masala)
  Oil 1⁄2 Cup (8 tbs)

1. Heat oil in a kadai and fry bhindis till semi-crisp.
2. Remove and keep aside.
3. In the same oil put saunf and kalaunji and fry till it crackles.
4. Add onions and fry till golden brown.
5. Now add ginger-garlic paste, tomatoes, curd, green chillies and salt and stir fry till oil floats to the top.
6. Add fried bhindis, mix well, cover and cook on a slow fire for 5 minutes.
7. Before serving sprinkle garam masala and garnish with chopped coriander.
