Spicy Pav Bhaji

Pav Bhaji is an all-time favorite Indian snack food which originated on the streets of Bombay. It has since gained popularity as a full fledged dinner item, perfect for entertaining, with it’s simplicity and “one-pot meal” concept. Pav Bhaji is also a deliciously sneaky way to get the kids to eat their veggies!
  Potatoes 3 Cup (48 tbs), diced small
  Cauliflower 2 Cup (32 tbs), finely chopped
  Frozen green peas 1 Cup (16 tbs)
  Carrots 1⁄2 Cup (8 tbs), diced small
  Salt 1 Teaspoon
  Turmeric 1⁄4 Teaspoon
  Water 2 Cup (32 tbs)
  Oil 1 Tablespoon
  Butter 1 Tablespoon
  Cumin seeds 1⁄2 Teaspoon (Jeera)
  Asofoetida 1 Pinch
  Red chili powder 1⁄4 Teaspoon
  Onion 1 Medium, finely chopped
  Garlic 2 Teaspoon, minced
  Ginger 2 Teaspoon, minced
  Tomatoes 1 Medium
  Canned tomato sauce 4 Ounce (0.5 Cup)
  Pav bhaji masala 2 Teaspoon (To Taste)
  Dhania powder 1 Teaspoon
  Lemon juice 1⁄2 Teaspoon (To Taste)
  Cilantro sprigs 5 , chopped (For Garnishing ))

1 In a pressure cooker, add potatoes, cauliflower, green peas, carrots, salt, haldi and water , mix well.
2 Pressure cook for 1 whistle and remove pressure after 2 minutes (To remove pressure, hold cooker under cold running water in sink).
3 In a non stick pan, heat oil and butter.
4 Add jeera and allow it to splutter.
5 Add hing and red chili powder.
6 Add onions, garlic and ginger, stir well.
7 Cook until the oil starts to separate.
8 Add tomatoes and tomato sauce, mix well.
9 Cook until oil starts to separate again.
10 Add pav bhaji masala and dhania powder, mix well and cook for 1 minute.
11 Add Vegetables and lightly mash.
12 Add lemon juice and adjust salt/chili powder/pav bhaji masala.
13 Cook for 5 minutes.
14 Garnish with Cilantro.

15 Serve with toasted hamburger buns or potato rolls.
16 Sprinkle some finely chopped onions on the bhaji when serving.
17 Add a little pat of butter to the bhaji when serving for extra flavor.
