Khatti Arvi Ka Saag

Ingredients
  Arvi 18 Medium
  Lemon juice 2 Tablespoon
  Oil 5 Tablespoon
  Garlic flakes 8
  Onions 200 Gram, chopped fine
  Tomato puree 3⁄4 Cup (12 tbs)
  Tamarind pulp 4 Tablespoon
  Jaggery 1 Tablespoon
  Salt To Taste
  Mustard seeds 1⁄2 Teaspoon
  Cumin seeds 1⁄2 Teaspoon
  Urad dal 1 Tablespoon
  Red chilies 4
  Coriander powder 3 Teaspoon
  Chili powder 1 1⁄2 Teaspoon
  Turmeric powder 1 Teaspoon
Directions

1. Wash arvi thoroughly and cook with enough water till done.
2. Add lemon juice and bring to boil again.
3. When cool, peel and quarter lengthwise and reserve in a panful of water.
4. Heat oil in pan.
5. Add garlic and saute over medium heat till light brown. Add mustard seeds, cumin seed, urad dal and whole red chillies. Stir until the seeds crackle. Add curry leaves. Stir for a minute. Add onions and saute for a minute. Add tomato puree, tamarind pulp chilli powder, turmeric powder, stir fry till oil floats to the top.
6. Add salt, 3 cups of water and bring to boil. Add arvi, lower heat and simmer, stirring occasionally till done.
