|Sesame oil||1 Tablespoon|
|Scallions||4 , chopped|
|Thinly sliced mushrooms||2 Cup (32 tbs)|
|Chopped cooked lean meat||1 Cup (16 tbs)|
|Soy sauce||2 Tablespoon|
|Roasted sesame seeds||2 Teaspoon, ground|
|Long grain rice||2 Cup (32 tbs), soaked in cold water for 30 minutes and drained|
|Water||3 Cup (48 tbs)|
Heat the oil in a large frying-pan.
When it is hot, stir in the spring onions (scallions), mushrooms, meat, soy sauce, sesame seeds and salt and pepper, and cook for 3 minutes, stirring constantly.
Stir the mixture into the rice and transfer to a saucepan.
Pour over the water and bring to the boil.
Cover, reduce the heat to very low and simmer for 30 minutes, or until the rice is very dry and fluffy and the liquid completely absorbed; do not remove the lid during the cooking period.
