Green Tomato Chutney & Tartar Sauce Fit For A Queen

ONEMAN SHOW describes how to make use of green tomatoes from your backyard to make CHUTNEY OR TARTAR SAUCE.
Ingredients
For tea spices mix
  Cinnamon 20 Gram
  Cardamom 20 Gram
  Ginger 20 Gram
  Black pepper 20 Gram
  Clove 10 Gram
  Nutmeg 10 Gram
For tomato chutney
  Vinegar 1⁄4 Cup (4 tbs)
  Water 3⁄4 Cup (12 tbs)
  Sugar 1⁄2 Cup (8 tbs)
  Green tomatoes 6 , chopped
  Bell pepper 1 , chopped
  Onion 1 , chopped
  Jalapeno 2 , chopped
  Salt 1 Teaspoon
  Garlic 1 Teaspoon
  Tea spice mix 3 Teaspoon
For tartar sauce
  Green tomato chutney 2 Teaspoon
  Myonnaise 1 Teaspoon
  Dijon mustard horseradish sauce 1 Teaspoon
For hot shot mix
  Salt 32 Gram
  Black pepper 33 Gram
  Red pepper 33 Gram
  Garlic 1 1⁄2 Gram
  Citric acid 1⁄2 Gram
Directions

FOR TEA SPICE MIX
MAKING
1. In a coffee grinder, add cinnamon, cardamom, ginger, black pepper, clove and nutmeg.
Grind them until powder. Transfer it to a container.

SERVING
2. Use the Tea Spice Mix to make tea and serve warm.

FOR TOMATO CHUTNEY
MAKING
1. In a sauce pan, mix vinegar and water. Put the pan on medium heat. Add in the sugar and dissolve it.
2. Add tomatoes, bell pepper, onion, jalapeno, salt, garlic and tea spice mix. Bring to a boil and cook for 5 minutes.
3. Let it cool and transfer to clean jars. Keep in refrigerator.

SERVING
4. Serve the Tomato Chutney as spread with grilled fish.

FOR TARTAR SAUCE
MAKING
1. In a bowl, put green tomato chutney. Add mayonnaise, Dijon mustard sauce and mix well.

SERVING
2. Serve the Tartar Sauce as a spread on sliced cibatta bread or baked fish.

FOR HOT SHOT MIX
MAKING
1. In a bowl, add salt, black pepper, red pepper, garlic, citric acid. Mix well.

SERVING
2. Serve the Hot Shot Mix with your favorite sandwich or salad.
