Okra And Tomatoes

  Butter/Margarine 1 Tablespoon
  Soft bread crumbs 3⁄4 Cup (12 tbs) (1 Slice)
  Frozen cut okra 10 Ounce (1 Package)
  Sliced scallions/Green onion 1⁄4 Cup (4 tbs)
  Butter/Margarine 2 Tablespoon
  All purpose flour 1 Tablespoon
  Salt 1⁄2 Teaspoon
  Pepper 1 Dash
  Milk 1⁄2 Cup (8 tbs)
  Shredded sharp process american cheese 1 Ounce (0.25 Cup)
  Tomatoes 1 3⁄4 Cup (28 tbs), peeled and chopped (3 Medium Sized)

In small bowl, melt 1 tablespoon butter at HIGH for 30 seconds.
Stir in bread crumbs and set aside.
Cut a few slits in top of okra package.
Cook at HIGH for 7 minutes; drain.
In 1 1/2-quart casserole, cook scallions in 2 tablespoons butter at HIGH for 2 minutes, stirring once.
Blend in flour, salt, and pepper.
Add milk.
Cook at HIGH for 2 minutes or till thickened and bubbly, stirring twice.
Add cheese, stirring till melted.
Fold in okra and tomatoes.
Cook at HIGH for 5 to 6 minutes or till heated through.
Sprinkle with crumbs.
