Okra And Tomatoes
|Soft bread crumbs||3⁄4 Cup (12 tbs) (1 Slice)|
|Frozen cut okra||10 Ounce (1 Package)|
|Sliced scallions/Green onion||1⁄4 Cup (4 tbs)|
|All purpose flour||1 Tablespoon|
|Milk||1⁄2 Cup (8 tbs)|
|Shredded sharp process american cheese||1 Ounce (0.25 Cup)|
|Tomatoes||1 3⁄4 Cup (28 tbs), peeled and chopped (3 Medium Sized)|
In small bowl, melt 1 tablespoon butter at HIGH for 30 seconds.
Stir in bread crumbs and set aside.
Cut a few slits in top of okra package.
Cook at HIGH for 7 minutes; drain.
In 1 1/2-quart casserole, cook scallions in 2 tablespoons butter at HIGH for 2 minutes, stirring once.
Blend in flour, salt, and pepper.
Cook at HIGH for 2 minutes or till thickened and bubbly, stirring twice.
Add cheese, stirring till melted.
Fold in okra and tomatoes.
Cook at HIGH for 5 to 6 minutes or till heated through.
Sprinkle with crumbs.
