|Minced onion||1⁄4 Cup (4 tbs)|
|Garlic||1 Clove (5 gm), chopped|
|Grated ginger||1⁄2 Teaspoon|
|Flour||1⁄4 Cup (4 tbs)|
|Curry powder||2 Teaspoon|
|Chicken stock||1 1⁄2 Cup (24 tbs)|
|Light cream||1 1⁄2 Cup (24 tbs)|
|Seedless raisins||1⁄2 Cup (8 tbs)|
|Apple||1 Medium, cored and chopped|
|Hard-cooked eggs||8 , chopped|
|English muffins||6 , toasted|
|Avocado||1 , sliced|
In saucepan melt the butter.
When hot, add onion, garlic, and ginger and cook for 5 minutes.
Blend in flour and curry.
Cook, stirring, 1 minute.
Remove from heat.
Add stock and cream.
Cook, stirring, until thickened.
Add raisins, apple, and eggs; heat.
