Onam Avial

The Aviyal is a signature vegetarian dish from Kerala. It is often made on auspicious days and during festival like Onam in Kerala. It is a thick mixture of vegetables, curd and coconut, seasoned with coconut and curry leaves. Avial is considered an essential part of the Sadhya, the Malayali vegetarian feast.
Ingredients
  Plantain 150 Gram, unripe, chopped
  Yam 75 Gram, chopped
  Potato 3 , cubed in 1 inch pieces
  Snake gourd 100 Gram, chopped
  Drumstick 3 , chopped into 2 inch pieces
  Carrots 2 , chopped
  Coconut oil 1 Teaspoon (As Needed)
  Cumin seeds 30 Gram
  Grated coconut 150 Gram
  Onions 2 , sliced
  Green chillies 5
  Turmeric powder 1 Teaspoon
  Tamarind extract 4 Drop
Directions

MAKING
1) In a blender, coarsely grind coconut, jeera, onions, green chillies and turmeric without any water. Do not make it soggy.
2) Take a saucepan and add all the vegetables. Put a little oil and mix. Then sprinkle turmeric and pour in the water. Cook for about 10 minutes
3) When the vegetables are cooked, add a few drops of tamarind extract. This is however optional. Simmer for 2 minutes.
4) Put in some curry leaves and some coconut oil. Stir well and remove from heat.

SERVING
5) Serve hot with Onam sadhya.
