Date Roll Ups

  Water 1 Cup (16 tbs)
  Chopped dates 1⁄2 Cup (8 tbs)
  Low calorie margarine 1⁄2 Cup (8 tbs)
  Granulated fructose 1⁄2 Cup (8 tbs)
  Hot water 1 Teaspoon
  Egg 1
  Vanilla extract 1 Teaspoon
  All purpose flour 2 Cup (32 tbs)
  Salt 1⁄2 Teaspoon
  Baking soda 1⁄2 Teaspoon

Combine water and dates in a saucepan.
While stirring, cook until mixture becomes a puree. (You might want to grind the dates in a blender after they become soft, and then continue cooking.) After mixture becomes thick, allow to cool completely.
Then cream together margarine, fructose, and hot water.
Add egg and vanilla.
Beat until smooth.
Sift flour, salt, and baking soda together.
Gradually add flour mixture to creamed mixture.
Beat until well blended.
Divide into three parts and then roll out to 1/4 in. (8 mm) thickness.
Spread each part with one-third of the date mixture, leaving about 1/4 in. (8 mm) around the edges.
Roll up jelly-roll fashion.
Wrap in plastic wrap and refrigerate to thoroughly chill (at least 3 hours).
Slice into 1/4 in. (8 mm.) cookies.
Then bake at 375°F (190°C) until brown.
