Classic Lemon Rice

  Cooked rice 100 Gram
  Oil/Ghee 10 Milliliter
  Asofoetida 1 Pinch
  Mustard seeds 5 Gram
  Dried red chilies 5 Gram
  Udad dal 10 Gram
  Chana dal 10 Gram
  Ginger 3 Pound
  Peanuts 10 Gram
  Coriander sprig 1 (To Garnish)
  Turmeric powder 1 Pinch
  Salt To Taste
  Lemon juice 20 Milliliter

1. To prepare this traditional lemon rice, pick, wash and soak rice for about thirty minutes.
2. Drain and then boil in plenty of boiling salted water until almost done. Drain and keep aside.
3. Heat oil/ ghee in a shallow pan or kadai.
4. Add a pinch of asafetida, mustards seeds.
5. When they crackle add dried red chillies broken into two, urad dal, chana dal and ginger and nuts.
6. Cook until dals change color to light brown and then add curry leaves.
7. Mix turmeric powder in this. Stir fry for half a minute.
8. Add cooked rice, salt and lemon juice.
9. Garnish with coriander.
10. Serve hot.
