Indian Chana Masala

  Chana 200 Gram
  Chana masala 25 Gram
  Coriander sprig 1
  Cumin 1 Pinch
  Garlic ginger paste 1 Tablespoon
  Green chilies 2
  Lime 1
  Oil 3 Tablespoon
  Onion 2
  Salt To Taste
  Tomatoes 2
  Turmeric 1 Pinch (Optional)
  Whole garam masala 3 (A Few Whole Pieces)

1. Soak chole in water overnight or to cook the same day soak them in warm water for at least 5-6hrs. Pressure cook chole. Drain the chole, reserve the liquid.
2. Chop up onion, tomatoes.
3. Heat oil in a deep saucepan and add cumin seeds and whole garam masala.
4. When the cumin seeds change color, add chopped onion to it and sauté till they are brown.
5. Add the ginger-garlic paste to it and sauté for couple of minutes.
6. Add tomatoes dry powders to it and sauté. Add salt and mix well.
7. Sauté the tomatoes till they are soft and mashed up.
8. Add the chole to the mixture and mix gently so that chole are properly coated with the mixture.
9. Add the reserved water depending on the gravy you need, check and adjust the seasoning
10. Simmer the stove and cook covered for 5-6 minutes and garnish it with cilantro leaves.
11. Serve it with bhature, puri or chapatti with sliced onion and lemon wedge by the side.

I just tried this recipe and did not have the channa masala pdr so I mixed 3 tsp corriander powder, 1 tsp amchur powder, 1 tsp garam masala, 1/2 tsp cumin powder, and 1/2 tsp paprika and it tasted as good if not better than most indian restaurants in my area. I have never been able to get this to taste right with the recipes in the cookbooks I have. I think part of the key to this recipe is in the technique and getting the masala right. Good recipe.

This recipe is looks very good! Instead of the channa masala powder used in this recipe, I use the following: 1/2 tsp amchur 1/2 tsp anardana 1/2 tsp turmeric 1 1/2 tsp coriander powder 1/2 tsp garam masala 1/2 tsp cumin powder 1/4 tsp black salt 1/2 tsp paprika 1/4 tsp cayenne powder I also add a couple curry leaves and a pinch of kasoori methi leaves. DELICIOUS!!
