Ingredients
  Ground meat 1 Kilogram (mutton)
  Chopped onions 3⁄4 Cup (12 tbs) (mixed together)
  Raw papaya paste 2 Tablespoon
  Green chillies 1 Teaspoon (mixed together)
  Red chilli powder 2 Teaspoon
  Mint leaves 1 Teaspoon (mixed together)
  Salt To Taste (mixed together)
  Pomegranate seeds 1⁄8 Cup (2 tbs) (mixed together)
  Garlic 1 Tablespoon, chopped
  Mutton mince 1 Kilogram
  Ginger 1 Tablespoon, chopped
  Garam masala powder 1 1⁄2 Teaspoon
  Eggs 4
  Processed cheese 50 Gram
  Black pepper powder 1 Teaspoon
  Chopped cilantro 1 Cup (16 tbs) (coriander)
  Cardamom powder 1 Teaspoon
  Mace powder 1 Teaspoon
  Eggs 2 , beaten (for coating)
  Clarified butter 2 Tablespoon (for shallow frying)
Directions

01 mix all the ingredients excludin the filling & the coating material and blend till properly mixed in a blender.
02 keep it aside for 01 hr.
03 beat the egg with salt & pepper.
04 heat a girdle till moderate hot.
05 take out the mince after 60minutes and make small dumplings out of it appox around 20 -25
06 stuff the dumpling with the stuffing made of onions and mint etc.
07keep them aside for 10 minutes.
08 smear the girdle with butter.
09 dip the kebabs in egg mixture & grill over the girdle till done properly
10 serve hot with mint chutney & zafrani roti.

the Shikam pur is a village near hyhderabad in andhra & most probably this is called shikam puri kebab due to a reason that is a dish from the same village or the chef who introduced it was from there.any how what ever the matter the thing is this that this terribelly hot delicacy is what keeps its feel even hrs after eating it.
