Spicy Spinach Balls
|Lean ground turkey breast/96% lean ground beef||8 Ounce|
|Dried italian seasoning||1 Teaspoon|
|Fennel seeds||1 Teaspoon (Whole)|
|Crushed garlic||1 Teaspoon|
|Crushed red pepper||1⁄2 Teaspoon|
|Frozen chopped spinach||10 Ounce, thawed and squeezed dry (1 Package)|
|Cooked brown rice/Bulgar wheat||1 1⁄2 Cup (24 tbs)|
|Finely chopped onion||3⁄4 Cup (12 tbs)|
|Grated nonfat parmesan cheese/Reduced fat parmesan cheese||1⁄3 Cup (5.33 tbs)|
|Fat free marinara sauce||1 1⁄2 Cup (24 tbs)|
1. Combine the ground turkey or beef and the herbs and spices in a medium-sized bowl, and mix thoroughly. Set aside for 15 minutes. Add the remaining spinach ball ingredients, and mix well.
2. Coat a baking sheet with nonstick cooking spray. Shape the spinach mixture into 32 (1-inch) balls, and place them on the baking sheet. Bake at 350°F for about 25 minutes, or until browned.
3. Place the marinara sauce in a small saucepan, and simmer over medium-low heat just until hot. Transfer the sauce to a small bowl.
