Tendli Bhaji

Gherkins known as Tondli in Marathi is a simple yet delicious vegetable. These are tiny oblong shaped green vegetables. This vegetable tastes great cooked by itself, or as a combination with other veggies.
Ingredients
  Tondli 250 Gram, washed and quartered lengthways
  Cumin seeds 1⁄2 Teaspoon
  Mustard seeds 1⁄2 Teaspoon
  Asafoetida 1 Pinch
  Curry leaves 6
  Garam masala powder 1⁄2 Teaspoon
  Turmeric powder 1⁄4 Teaspoon
  Red chilli powder 1⁄3 Teaspoon
  Vegetable oil 1 Teaspoon
  Salt To Taste
  Fresh coriander 1 Teaspoon (for garnish)
Directions

Heat oil in a wok, non-stick is better. Add the add the mustard, cumin and asafoetida. When the mustard seeds pop, add the curry leaves and stir for 10 seconds.
Add turmeric &red chilli powder, stir for a couple of seconds and add sliced Tondli.
Now add the garam masala and salt.
Stir thoroughly and cook covered on low medium heat, until tender & crisp.
Garnish with fresh coriander and serve hot with a dal -rice or plain rotis.
