Carrot and Onion Salad Indian Style
|Green chili pepper||1⁄2 , finely chopped|
|Lime juice||3 Tablespoon|
|Sunflower oil||6 Tablespoon|
|Ginger||1 Tablespoon, peeled and finely grated|
1 Peel the carrots and grate coarsely.
2 Peel the onion and cut into thin strips.
3 In a large bowl, mix the carrot and onion with the chopped chili pepper.
4 In a small bowl, dissolve a large pinch of salt in the lime juice.
5 Gradually beat in the oil to form an emulsion like a vinaigrette.
6 Stir in the grated ginger.
7 Pour over the carrot and onion mixture and mix briefly.
8 Allow to stand for 10-15 minutes.
9 Serve in individual serving dishes or in a large salad bowl.
