Indian Style Chicken
|Cooking oil/Olive oil||1 Tablespoon|
|Cooked brown rice||2 Cup (32 tbs)|
|Nonstick spray coating||2 Tablespoon|
|Meaty chicken pieces||2 1⁄2 Pound, skinned|
|Low fat plain yogurt||8 Ounce (1 Carton)|
|All purpose flour||2 Tablespoon|
|Ground cumin||1 Teaspoon|
|Ground ginger||1⁄4 Teaspoon|
|Chopped sweet red pepper/Sweet green pepper||1⁄2 Cup (8 tbs)|
|Tomatoes||2 Medium, seeded and chopped|
In a large skillet cook onion and garlic in hot oil till onion is tender but not brown.
Stir in cooked brown rice.
Spray a 12x7 1/2x2 mch baking dish with nonstick spray coating.
Spread rice mixture in baking dish.
Arrange chicken pieces atop rice.
In a mixing bowl stir together yogurt, flour, cumin, ginger, and 1/2 teaspoon salt.
Stir in chopped green or sweet red pepper.
Spoon over chicken in dish.
Bake, covered, in a 350° oven for 50 to 60 minutes or till chicken is tender.
