Fruited Rice Ring For Curry
|Orange marmalade||1⁄2 Cup (8 tbs)|
|Seedless raisins/Seeded raisins||1⁄4 Cup (4 tbs)|
|Cooked rice||4 Cup (64 tbs), cooled (White Or Brown)|
Using a fork, fold marmalade and raisins into the rice (be careful not to mash rice grains).
Add salt if necessary.
Pack firmly into a well-greased 1-quart ring mold.
Set mold in a shallow pan of hot water and bake in a 350° oven just long enough to heat thoroughly.
