Authentic Chicken Curry
|All purpose flour||1⁄2 Cup (8 tbs)|
|Black pepper||1⁄4 Teaspoon|
|Whole chicken breasts||2 , split, skinned and boned|
|Extra virgin olive oil||3 Tablespoon (Filipo Berio Brand)|
|Chopped onion||1 Cup (16 tbs)|
|Chopped green bell pepper||1⁄2 Cup (8 tbs)|
|Garlic||1 Clove (5 gm), chopped|
|Curry powder||1 1⁄2 Teaspoon|
|Dried thyme leaves||1⁄2 Teaspoon, crushed|
|Canned diced tomatoes||2 Cup (32 tbs) (Canned Or Fresh)|
Preheat oven to 350°F.
Combine flour and pepper; sprinkle over both sides of chicken breasts.
Heat olive oil in large skillet over medium heat.
Cook chicken 15 minutes or until lightly browned on both sides.
Remove from skillet; place in large ovenproof casserole.
In same skillet, cook and stir onion, green pepper, garlic, curry powder and thyme 5 minutes or until onions are lightly browned.
Stir until heated through.
Pour tomato mixture over chicken in casserole.
Bake, uncovered, for 30 minutes or until chicken is tender.
