Yakhni Shorba

Yakhni Shorba has a great taste. Yakhni Shorba gets its taste from lamb meat cooked with curd and flavored with spices. Yakhni Shorba is loved by meat lovers.
  Bay leaf 2
  Beaten curd 2 Cup (32 tbs)
  Black cardamom 6
  Black peppercorn 10
  Boneless lamb meat 500 Gram
  Cinnamon stick 2 Inch
  Cloves 8
  Coriander seeds 2 Teaspoon
  Cumin seeds 1 Teaspoon
  Fennel seeds 2 Tablespoon
  Ginger piece 2 Inch
  Lamb shank bones 500 Gram
  Saffron 1⁄4 Teaspoon
  Salt 3⁄4 Teaspoon
  Bouquet garni 1 (Spice Potli)
  Sugar 1 Tablespoon
  Water 8 Cup (128 tbs)

Spice Potli.
Fold cloth twice.
Pull all the spice in the center.
Collect the edges and tie with a string.
Potli is ready.
Combine lamb meat, lamb bones, water, sugar, salt and Spice Potli in a large, deep pot.
Bring it to a boil, turn heat to low and cook lamb on medium heat till the water is reduced to half.
If the meat is not tender at this stage, add more water and keep cooking till done.
Remove meat and bones and set aside.
Dissolve the spice potli.
Add beaten curds.
Crumble saffron and sprinkle over the mixture.
Add the lamb and bones that have been set aside.
When water starts boiling, lower heat and simmer for 5 more mins.
