Stuffed Lemon Pickle

The stuffed lemon pickle is a spicy and peppy lemon pickle. Made with fresh lemons stuffed with a medley of spices like chili peppers, coriander powder, ginger, cinnamon and cardamoms, the stuffed lemon pickle is a cooked pickle. Sealed and set to mature in the sun, it is appetizing and can be served with meals as desired.
  Lemons 1 Kilogram
  Nutmeg 1⁄2 Teaspoon (Leveled)
  Cloves 8
  Pepper 4 Teaspoon
  Cumin seeds 2 Teaspoon
  Red chili pepper 3 Teaspoon
  Coriander powder 2 Teaspoon
  Dry ginger powder 2 Teaspoon
  Cinnamon powder 1⁄2 Teaspoon
  Big cardamoms 2
  Asafoetida 1 Teaspoon
  Black salt 3 Teaspoon
  Salt 12 Teaspoon
  Lemon juice 1 Cup (16 tbs)

1) Give four careful incisions to the seeded lemons without disturbing their bases.
2) Make a smooth mixture of the ground dry ingredients and stuff the lemons with this masala.
3) Add the lemon juice to the stuffed lemons and cook on low heat until the juice starts to boil.
4) Remove from fire and pour them into an airtight jar.
5) Keep in the sun for 4 days shaking it once daily.
