Celery Sambar

Celery Sambar has a tangy taste. Celery Sambar gets its rich flavor from tur dhal mixed with coconut red chili and flavored with tamarind. Celery Sambar is inspired by many food joints worldwide.
  Toor dhal 225 Gram, washed and drained
  Salt 1 Teaspoon
  Turmeric 1 Teaspoon
  Water 1 1⁄5 Liter
  Celery head 1⁄2 , cut into 5 centimeter lengths
  Desiccated coconut 2 Tablespoon
  Boiling water 3 Tablespoon
  Dried red chilies 1 Teaspoon (Small Ones)
  Ground cumin 1 Teaspoon
  Ground coriander 2 Teaspoon
  Tamarind 50 Gram, soaked in water
  Water 150 Milliliter
  Butter 25 Gram
  Asafoetida 1 Pinch
  Mustard seeds 1 Teaspoon

Put the dhal, salt, turmeric, water and celery in a pan and bring to the boil, then partially cover the pan and simmer for 1 hour.
Put the coconut and boiling water in a food processor or liquidizer and work for 20 seconds.
Add the chillies, cumin and coriander and work until smooth.
Stir into the dhal with the strained tamarind water and simmer for 15 minutes.
Heat the butter in a small frying pan, add the asafoetida, if using, and the mustard seeds.
When the seeds begin to pop, tip the contents of the pan into the dhal mixture.
