Punjabi Mango Pickle

Punjabi mango pickle is a spiced mago pickle. Popular in the Punjab region of India, the punjabi mango pickle is spiced with red chili peppers, fenugreek and aniseed. A non-cooked pickle, it is mixed together with raw mangoes and matured in the sun before sealing it with oil.
  Raw mangoes 1 Kilogram
  Salt 150 Gram
  Red chili pepper 30 Gram
  Fenugreek seeds 3 Teaspoon
  Aniseed 6 Teaspoon
  Onion seeds 15 Gram
  Turmeric 7 Gram
  Mustard oil 2 1⁄2 Cup (40 tbs)

1) Cut the mangoes into big pieces removing the seeds.
2) Make a mixture of salt, turmeric, red chilli and 12 teaspoons of mustard oil and rub it on the mango pieces.
3) Put it in a jar, set in the sun and shake it daily.
4) After two days, pour rest of the oil to the jar and set aside for another 15 days but not in the sun, and shake it every day.

Ok, but what about all those spices like fenugreek and onion seed?

Fenugreek is seeds of a herb called Methi in hindi language and Onion seeds is Kalonji in Hindi English, they are tiny tear shaped and black in colour and slightly pungent in taste.

Sorry that reply was incomplete Kalonji is in Hindi and in English it is Nigella seeds the seeds are slightly pungent and bitter in taste.Check it out on the web.
