Sate Kambing Madura
|Indonesian soy sauce||1⁄2 Cup (8 tbs)|
|Ground red pepper||1 Teaspoon|
|Hot water||3⁄4 Cup (12 tbs)|
|Peanut butter||1⁄3 Cup (5.33 tbs)|
|Roasted peanuts||1⁄2 Cup (8 tbs), ground|
|Garlic||1 Clove (5 gm), minced|
|Lemon||1 , juiced|
|Leg lamb||3 Pound, well trimmed, boned and cut into 1 inch cubes|
1. Combine all ingredients except lamb in a saucepan. Bring to a boil and stir until smooth. Cool to room temperature.
2. Pour half the sauce over the lamb cubes. Mix well and let stand one hour. Reserve remaining marinade for later use.
3. Preheat broiler. Arrange the lamb on small skewers, broil quickly on all sides
