Dam Aloo

Ingredients
  Small potatoes 450 Gram (Preferably New)
  Onion 1 Medium
  Oil 4 Tablespoon
  Chili powder 1 Teaspoon
  Turmeric 1⁄2 Teaspoon
  Root ginger/1 teaspoon ground ginger 25 Gram, peeled and ground to a paste
  Sugar 1⁄2 Teaspoon
  Salt To Taste
  Water 150 Milliliter
  Garam masala 1 1⁄2 Teaspoon
  Chopped coriander leaves 1 Tablespoon (For Garnish)
Directions

Scrub or peel the potatoes and cut them into even sized pieces.
Boil them until just tender.
Grind the onion to a fine paste.
Heat the oil in a pan, add the onion paste and fry until lightly browned.
Stir in the chilli powder, turmeric, ginger, sugar ad salt.
Fry for 1-2 minutes without letting the mixture burn, then add the water.
When the water begins to simmer, stir in the potatoes, cover and cook until the sauce has thickened.
Sprinkle with the garam masala and remove from the heat.
Garnish with coriander leaves and serve.
