Aha ! Vengan Batata Nu Shaak ! This potato and eggplant with irresistible tomato, coriander and chilli seasonings is as special as my first love ! I'm sure you'll agree with me once you try this Vengan Batata Nu Shaak. Feel free to share your views about this with me !
  Eggplants 4 Medium, sliced
  Potatoes 4 Medium, peeled and sliced
  Tomatoes 4 Medium, sliced
  Red chili powder 1 Teaspoon
  Turmeric powder 1 Teaspoon
  Coriander powder 1 Teaspoon
  Cumin powder 1 Teaspoon
  Hot spice mix powder 1 Teaspoon
  Oil 4 Tablespoon
  Water 4 Cup (64 tbs)
  Sugar To Taste
  Salt To Taste
  Finely chopped coriander leaves 1 Teaspoon (For Garnish)

Take a pan, heat oil, add the tomatoes and spices.
Add a little sugar to soften the tomatoes by frying on medium heat for about 3 minutes.
Now add and fry potatoes and eggplants for about 5 minutes.
Pour water and cover the pan.
Cook the vegetables on medium to low heat for 4 minutes.
Sprinkle coriander leaves before serving.
